I'm thinking this is a Maple... but it's not the same as most Maples I've seen.

I ask because this is from a downed tree, maybe 12" diameter, pretty straight trunk for 15 feet...I'm wondering if I'm just as well off dragging it to my burn pile or, is it worth stacking on a pile and dragging said pile to a saw mill an hour away to have it sawn into boards for projects (like making a dovetailed box).

What's your vote.....burn or slice & dice?

Yeah, it has a more serrated edge like a sycamore leaf

Slice and dice. Slice off a disc,cut disc across center into 2 semicircles then sand edge of a half disc to reveal what surface of boards will look like.
