That pic with the blue tractor - wow that's cutting nicely! Mine won't do that even weighted down @ 1,000 lbs total. Of course could me my high rock content & red clay.... But still, a cut that deep mine's either gonna want to skim or try to bury itself cutting down as it goes. No in between on somewhat moist soil like that for me.
Are those rippers fixed or can you still adjust each ones individual height on that kind?
Also....back on topic and to OP's questions....I think I'd go with a 5' for a CK3510. EA would know better I guess, but with fairly larger tires & a decent amount more weight, I can still anchor mine @ 72". I think a CK would be a little worse about that @ 66". Of course if just spreading or taking care of a gravel road, it wouldn't matter.
A lot depends on how it's ballasted. My red tractor is 32hp, HST and 5000lbs. It has zero issues with a 65" 800lb ROBB.
The rippers, mine anyway are set at 10". You want-need a different depth, you adjust with the hitch.
