What to do to my CK20S HST in the winter?

It's probably obvious, but make sure the antifreeze in your coolant is up to the lowest temps you expect to see. If in doubt, change it out. Also, an oil change before long-term storage will ensure the acids and other products of combustion aren't there to attack the metal over the long winter (assuming you haven't changed the engine oil recently).

I make sure my anti-freeze protection is good to -50F. That would be a little better than a 50/50 mix of eythelene glycol to water. Say about 60/40. You don't want to get much stronger than that.

Right you are! Too much glycol not only produces a less effective "anti-freeze" mixture but also risks gooey glycol-based deposits inside the motor that can inhibit heat transfer (too much of a good thing).
