Was the previous shed walls close? I wouldn't put anything other then planks under the metal roof... I can't see condensation happening if there is no walls to trap the humidity in and if you put something below the metal and its water proof condensation will happen on it regardless putting anything underneath is a waist of money ... and why would you spend the money to sheet it with plywood if you put metal on it ? ... makes no sense.
Your rafters are far apart obviously not complete or no updated picture, you will have to have to ridge beam and more 2x6 or what ever you will install then planks at 12 to 16 inch and the metal...
this is mine ... 2x4 then planks
this is the only thing I put under at the peak ... in your case you would only need it for the cap.
online exemples ... over board with the planks on the first one but you get the idea.
