We went to city water while we lived in Baton Rouge. I piped in from the street with that flexible poly (polypropylene; I believe it is) line. Think I went to an inch or more in diameter there. For piping out to my barn and down the hill to my garden, I just used PVC. Most well water supply lines use that black poly to the pressure tank, after which they go to copper or other type of plastic inside the house. My house here in Va is poly-to-tank and then copper.
For water here from some rain tanks, I bought 3/4" black poly pipe in rolls of 400' and 100'. This size was big enough to run soaker hoses in my garden down below (100' vertical and 300-500' down slope, totalling near 1200' of poly all the way over to an alternative site at a little stream for water supply).
For water to my carriage house, I just used PVC (sch 160). The carriage house isn't insulated. I drain the pipes for the winter. Supply to the PVC at a surface valve is via a short length of garden hose.
Found out recently that you have to be careful in using garden hoses to drink from. Many newer ones are make from recycled rubber that can have lead in it.
