Left over lasagna that my wife made the other day. Tasty. She never makes it the same way twice as she uses whatever she has, but it's always really good!

Did a 2lb beef tenderloin on the grill tonight. And made some seasoned roasted taters in the air fryer.

Both turned out really good. Made up a dry rub and treated the meat last night. Let it sit for almost 24hrs and then grilled it with with natural lump charcoal.

Both the.meat and taters had rally good flavor

Got a dutch apple pie for dessert tonight.

Left over pizza. Supreme.
Couldnt finish it. Ate way too much at my parents for lunch.

New year's eve dinner...

Lobster tails and ribs with some rice pilaf.

We bought the ribs from a local place, because, well, I can't compete. They're great.

However, I made the lobster tails.

Split, pulled, lemon under the meat, sprinkled with coarse salt, white pepper, garlic powder and Hungarian paprika. Broiled to 140 internal temp.

Pretty tasty. :p

Dinner tonight...

Rump roast! :p

Put a rump roast in an InstantPot.
Add 2 cups of water.
Sprinkle on a packet of french onion soup mix.
Sprinkle on a packet of Au Jus sauce mix.
Close up and pressure cook on high for 90 minutes.
Quick release the pressure.
Remove roast to platter, cover with foil and a towel to keep warm.
Add cubed potatoes and carrots to the InstantPot.
Close and cook on high pressure for 5 mintutes.
Quick release the pressure.
Remove veggies to bowl, cover with foil and towel to keep warm.
Mix 2 heaping tablespoons of corn starch in 2-3 tablespoons of water in a bowl.
Set the instant pot to sauté and add cornstarch mixture.
Stir until thickened.
Pour off into gravy boat.

Slice the roast and serve everything.
Enjoy! :)

Slow smoked 6 hours, misted every 30 minutes with pineapple juice and apple cider vinegar.
I wish you all could smell the smoke ( mesquite wood). Yes the meat was falling off the bone tender.
