I have done what you're describing with my JD110 backhoe. (And with a Bobcat 430, 435, JD 50, 120, 200 and Komatsu 138 excavators, too. The valve bodies on excavators are different BUT you can get OVERCORRECTION with hyd functions.)
The key is to NOT have one function FULLY engaged while using another function.
Attempt to engage both functions mid-way or so (bleeding hyd power to both) and when one or the other function reaches the end of travel - the other simultaneous operation doesn't IMMEDIATELY get full hyd flow and OVERSPEED!
Of course, I still get distracted with something or other - and have one lever or the other maxed out - and when it reaches the end of function travel; the other motion can JUMP, and I'll cuss myself for not paying attention...
