The problem with roll over/tilt over is that when it happens it happens fast.
The center of gravity starts moving and when it moves outside the footprint of the tractor, over she goes.. real fast. Lowering equipment is a must in dicy situations as well as slow going so you can put equipment on the ground quick if need be.

Yep the mower deck can also help lower the CG. loaded tires, too.

A tiltometer sure sounds like a good idea. I will investigate one here in OZ. Unfortunately my gut tells me to back offeven around about the 10 degrees mark.

I have the R&B tiltmeter... works fine... They are good people. I have the model that shows tilt both ways mounted on the windshield of the cab. It's good for learning about the amound of tilt you are actually experiencing and the way the tractor actually "feels" and thus calibrating your pucker factor. I'm glad I got it.

Having used it for a while, I've found that when lifting very heavy items on unlevel/bumpy ground it is imperative to go very slow... and be prepared to drop the load. The tiltmeter is only an indicator... it is not a replacement for good judgement or careful tractor handling. I've had wheels off the ground quite a few times..... when this happens, you've got to know it and take remedial action IMMEDIATELY, otherwise, the center of gravity can extremely quickly move outside the tractor footprint... not a pretty sight.

The hub extensions sound like a good idea. I have often thought that the front tires on my 2520 are way to small and to close together. I have a BH for the deere and have found that putting this on helps a lot when using the FEL.

One other question I have is if she goes over (dare I say), how on earth do you get her upright. I was thinking I could use the BH stablisers but when on its side does the motor still run?

chain, tow hitch, your vehicle slow.

Tow truck fast.

Winch on something solid fast.

multiple people pushing on it, dangerous, slow, not good for the body parts, dangerous.

No, the oil in the sump would drain to the lowest part of the engine when it's lying on it's side. No oil in the sump means no lubrication in the engine.
Even when you right the machine it would be advisable to let it set for at least a couple hours before attempting a start up. If you have to move it to a level area, tow it. Personally, I'd let it set for a day, if possible.

As far as righting it...at least a full sized pickup, especially if the back hoe is rigged to the tractor. A robust winch might do the job too. It depends on the size of the tractor, I should think.

Here in West Virginia, we know slopes and hills and we mow UP AND DOWN.
Mowing a pasture is not like mowing the lawn. Sometimes you've got to mow a little bit and then drive a bunch to get around and set-up for the next patch to mow. You can't go for efficiency when mowing hillsides.

One little hole or dip in the wrong place will take you on a ride you might not live to tell about.
The leading cause of accidental death of farmers around here involves tractors and steep slopes. The stories are chilling.
