As others have mentioned, and I myself found, when you want to insulate, and you're planning on using fiberglass and then hanging some type of board on the inside walls, you're best having studs. I essentially built a stud wall on the inside of my pole barn walls. I ended up with a nice wall, flush with the posts, but at an extra cost. My outside is vinyl with OSB under. Roof is shingles and attic is also insulated. If I had it to do again, I'd of thought ahead and built stud walls from the beginning. My opinioun is, pole construction is good for barns. If what you really want is an insulated garage, even with 10, 12, or 14 ft side walls, build stud walls. You can still use steel siding if your really hung on that as long as you use OSB under or slap on perlins.
