I'm looking at getting a jd tractor that can rototill / blow snow within the next two years. Is the cornering / steering that much of a difference between the x500 and the x534?

I'm not sure about the steering difference but if you are considering a snow blower I would go with a model with hydraulic lift. I have the X530 and the hydraulic lift for the heavy blower is nice. I think I read that the X500 with the blower is fairly heavy on the mechanical foot lift. There is a spring assist that makes it a little easier but that is an option. Also I thought I read that you can't put chains on the 4 wheel steer model. Not sure about that. Maybe someone else can confirm.

Turning radius: X500 22", X534 27"
Doesn't power steering in of itself increase turning radius? X300=16", X310=22" X320=16", X360=22"

I am glad to have the hydraulic lift but wish it had a little more range (higher lift) for the snow blower, full up is barely 4 inches off the ground.
Don't waste your money on the JD soft enclosure for winter time, its a PITA to install and does a poor job of closing you in. If you get the snow blower make sure you get at least two 42# weights and/or wheel weights, you'll need them to offset the weight of the blower else you will have reduced rear traction.
