I've heard of it; in fact the first time was about 50 years ago. Thank goodness our FFA only did calves and pigs.
When my Dad and the crew were cutting calves we would fry the little ones on the spot. The bigger ones would be cleaned and soaked overnight. We're talking fifty head a day cut.
Crying shame to waste them. My wife's mom leases her farm to a neighbor who runs cows. I didn't know they were cutting calves until my dog started bringing her prizes home and burying them in the garden, flower beds, etc. I asked the neighbor why he didn't keep them and he just made a face. Crying shame.I used to work with a guy who ran a few calves every year; he just threw the fries away because they didn't like the thought of eating them. I asked him to save them for me, which he did. I made the mistake of taking some of the leftovers to work for him to try (they were still pretty good heated up in the microwave), and he immediately asked how we prepared them. Those were the last fries he ever gave away.
