We have so much "Zucchini" right now that we can't use it all... We have gave a lot away at church.

My wife also canned some "Zucchini" in pineapple.... That's the first time she has tried that, and she opened a jar yesterday and said it was good like that.... But it will taste better after several weeks after being canned.

If anyone is interested in these recipes let me know.

Hey Bill, how 'bout posting that parmesan recipe, I have a soft spot for cheese of any kind and it sounds yummy.

All of these sound yummy, sidebar, for the first time in my life I'm starting to gain weight! Old age I guess.

I'll second Jims the vote for the parmesan recipe and would also like a look at the patties recipe. I also have a few casserole recipes and I had better stay away from the chocolate cake. I recently lost some weight and don't need it back:D:D

try mincing some up and adding it to things like deviled eggs, hush puppies etc...

----We like to cut up four or five smaller Zucchini ,three or four small to medium sized tomatoes , small onion, cup or so of button mushrooms, and half a beef sausage we like Hillshire farms, put it all in a suitable pot with a couple cups of liquid( water or stock ) and cook till vegetables are done, we add a little black pepper and garlic to taste.
When done add a little corn starch to thicken and serve over pasta we like rigatoni, sprinkle with parmesan cheese. Thirty minute's for us.

My wife has a recipe for mock apple pie somewhere. You use the squash instead of apples. Pretty good. Maybe google it and see what turns up.

I'm 6'1 and my weight has always been about 160lbs....and now I'm 42 and I weigh 190lbs. :D.... I guess I'm getting old too. :D

Zucchini with Parmasan.

  • Small to med. zucchini.
  • Butter.
  • Seasoning salt.
  • Onion powder.
  • Parmesan cheese.
  • Paprika.....(for color)...:rolleyes: :D

Preheat oven to 350F. Spray baking sheet with nonstick spray.
Cut small to med. zucchinis in half lengthwise..Set on baking sheet. Spread on a dab of butter. Sprinkle lightly with seasoning salt, onion powder, a heavier sprinkle with Parmesan cheese, then add a little paprika.

Bake 15 to 20 minutes until they look lightly browned.

Zucchini patties.

  • 2 Cups grated zucchini.
  • 2 Eggs, beaten.
  • 1/4 Cup chopped onion.
  • 1/2 Cup all-purpose flour.
  • 1/2 Cup grated Parmesan cheese.
  • 1/2 Cup shredded mozzarella cheese.
  • Salt to taste.
  • 2 Tablespoons vegetable oil.
In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese and salt... Stir well enough to distribute ingredients evenly.

Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping table tablespoonfuls, and cook for a few minutes on each side until "Golden."


On the "Zucchini Patties" recipe this is what it says about it.

These cheesy zucchini patties are an "excellent way to use up that abundance of zucchini from the garden." Serve with a bit of tomato or sour cream dabbed on top.

Thank God for recipes like that! :D... We have so much & have gave a lot away... Some people wouldn't take any because they didn't know how to fix it.

My wife is going to cut some slices and Put in the dehydrator.

This is what she picked today.... There is some cucumbers & corn in the pic. also.... The corn was for dinner today. :D

Thanks for the recipes, they both sound delicious. Hopefully I'll get a chance to cook some up in the next few days. Nice to see the pics of the nice green veggies from the garden. I'm hoping to pick some corn in the next few days, it's really been slow to come this year.

A friend's wife gave us this one for all that zucchini:



DONNA担 ZUCCHINI RELISH


10 CUPS CHOPPED ZUCCHINI SEEDED
3 CUPS CHOPPED ONION 2 LBS
1 RED & 1 GREEN PEPPER CHOPPED
5 TABLESPOONS SALT
(SET OVER NIGHT )
NEXT DAY RINSE IN COLD WATER AND DRAIN THROUGHLY

HEAT TOGETHER
2 ス CUPS DARK VINEGAR
6 CUPS SUGAR
2 TEASPOON MUSTARD SEED
2 TEASPOON TUMERIC
2 TEASPOON CLEERY SEED
4 TEASPOON CORN STARCH
ス TEASPOON PEPPER

ADD ZUCCHINI MIXTURE AND COOK 30 MINUTES, STIRRING OFTEN
YIELDS 6 PINTS (12 8 OZ JARS)

I've come to the conclusion that zucchini have the ability to warp the time-space continuum. I checked the two vines growing alongside the house yesterday, and there were only a couple of nice-sized ones that I picked. I checked again this morning, and there were two roughly the size of the Goodyear blimp lying there! It HAS to be some kind of quantum trick...

See post #76 in this thread for a squash pie recipe posted by clenhart. I've tried it and it's pretty good, too.

As for the zucchini, we eat most of ours just sliced, steamed, buttered, salted and peppered and really like it mixed about 50/50 with yellow squash.
