OK, we have a general concensus here at the house. The beef is not great...it's fantastic! The strong grass-fed after taste is gone and it just has a wonderful sweet flavor. I'm sold on the grain finishing.:thumbsup:

We have somewhere around 80 steaks, so after trying this set of meat, I have come to the conclusion that we probably won't be able to host more than six or seven people.:laughing: Just kidding, but the steak really is that good.:thumbsup: We also have hamburger and german sausage as well.

Cyril I have to agree the beef I bought from you is awesome.. We have been enjoying some pretty good steaks off of the barbecue. Hamburgers are just as good!

It should be somewhere between 50-60 cents/lb. I'm going to have to ask as I changed butchers this year. I found out that the butcher I was using pooled hamburger rather than keeping things seperate. When you are trying to sell grass-fed beef, it's important to know that what the customer is receiving is what you are advertising. With him pooling the hamburger, who knows what you are really getting. Also, since I am eliminating the Dexters and going to all Highlands which as grass-fed have lower colesterol than Buffalo, I want to make sure things are what they should be. This butcher isn't as convienient as the last as he is in Savana (west of Arlington) and the last was in Snohomish, but he comes well recommended by some of the local members of the Northwest Highland Cattle Assoc. which we belong to.

Yes, they are good! They butchered a hog for us years ago. Very well done. I always get my ribs for the smoker from them.
