I bone & grind everything, use it for chili & dried "sticks"! No "hanging" for me, as soon as it's cooled (over night), I skin it & cut it up. This method has worked for me for years. We have all the beef we can use as it is part of the farm rental agreement, so we really don't need the meat. I just like it for those purposes & since I take care of the deer, I just as well harvest one or two per year. ~~ grnspot110

I had one experience only of taking a deer to a processer/butcher place,and it was bad,,was away from home 6-7 hours drive,killed a deer and fatherinlaw said we could take it to a place and they would skin/cut up/freeze in packs,,so I could than take it home in a day or two frozen in a cooler.

We got there and there must have been 200 dead deer laying everywhere,it was in the 70's,took it to them,they did a little paper work and put a tag on it,,and we left,,I had my father in law turn around before we even got half way back,,told them I changed my mind,wanted it back,,they started looking for it,,found it under probably 20 others in a pile,out in mostly sun.

There is a Mennonite-run place ~30 minutes from where I live that I would trust to do up most anything. They have lots of space to hang animals before they do the final processing and they did a good job on the pig that we sent there.
But, other than that I would do it myself.
