I bone & grind everything, use it for chili & dried "sticks"! No "hanging" for me, as soon as it's cooled (over night), I skin it & cut it up. This method has worked for me for years. We have all the beef we can use as it is part of the farm rental agreement, so we really don't need the meat. I just like it for those purposes & since I take care of the deer, I just as well harvest one or two per year. ~~ grnspot110
