I am headed up to my ranch this next weekend and would like to have some oil and hydraulic fluid on hand in case I need to add any. What type of oil would this truck use in the engine?
Also, if I needed to add hydraulic fluid to the box for the dump bed, is there a certain kind?
Thanks for any help!

The CAT 3208 just needs a good quality motor oil, rated for diesel engines with a turbocharger. Probably the best-known would be Rotella-T. I have 3 diesel tractors and 2 diesel trucks, so I buy oil from a local fuel supplier. I use the Exxon XD-3 or Mobile Fleet in 15W-40.

The hydraulic system needs a good quality hydraulic oil. Just about any clean hydraulic oil will do, but to keep things simple, you can use the hydra-trans fluid that you put in your tractor. It cost a little more than plain hyd oil, but it shouldn't hurt anything. (except your wallet if the hyd system on your truck leaks a lot)

What he said....
The 3208 is not one of the favorite Cat engines ever built... way underpowered in most applications, but seem to just run forever unless they are on a FRAC or Firepump application...

nothing... I get "stress disorder" when I see the numbers 3208!!..

Like others have said, just use your favorite diesel engine oil... Use CI or CI+ rated oil if you can find it... if not, you will have to run CJ rated..
Mobil still sells CI rated, also offered up as Cat oil, but they are the same minus the labeling.
I am not sure who else..
