I guess it was the years before when the plaque formed. The force of the blood running up that hill just broke it loose and a blood clot formed a.k.a. heart attack.

I wonder what it is that makes your liver overproduce cholesterol and then not filter it out properly coming back through? Even with the Statin drugs which are suppossed to reduce your liver's ability to produce cholesterol you have still had to resort to extraordinary measures to keep it under control.
Do they do any liver testing with someone in your condition on a routine basis?
We are all walking time bombs of one sort or another with conditions that may
really mess us up, but we often don't know we have them until some test or radiation study for perhaps something entirely different just happens to expose it.
In your case you were trying to control a known cholesterol problem but something just wouldn't let you do it.
I have said before; you are strong willed and trying to fix the problem. As Doc said he get's tired of the whiners that just complain and want a pill to fix everything instead of putting forth any effort themselves.
BTW.. Your driveway is looking great!

My liver functions are tested at each lab blood drawn cholesterol test since I'm taking statins. They are perfect.
I realize now I had too much oil/fats in my diet even though I did not eat animal products for several months.
Here is a study that showed fruits and vegetables can affect a heart disease chromosome in a positive way.

Yes, the blood panel that is used for cholesterol also includes ALT and AST which if over time, or suddenly, gets worse can indicate the liver is being damaged by a number of possible factors, drugs, alchohol, smoking, etc.

But you are saying you have actually had a chromosone test that indicated your possible risk factors?
Has your brother had the same chromosone test with different results?

Maybe not. I wouldn't do it....for myself.
I interpretted your earlier message as if you already had done it.
You might be predisposed of some other things you don't know about that would give you undue concern. The technology is too iffy and the quality is not controlled.
Your doing a stellar job of controlling your condition already.
But you gotta make your own call on whether or not to try things.
Pay no attention to me. I'm just curious as to what is going on in the heart
condition field these days. I had my mother live with us for her final 5 years after she had her first heart attack in the late 90's. and I could write a book, but won't.

After seeing all those diseases that can be gene tested for the only time I would want gene testing is when I could do something about it or to confirm or rule out a diagnosis.

TMR and wife came to my world for a few hours yesterday. We had good conversation and good heart healthy food for lunch. We had Salisbury Steak, carrot and white bean salad, and a big green salad. Of course for desert we had the, cinnamon rolls. The meal was all plant based and fat free.

I promised to put the recipes on line to share with everyone.
Also at the bottom are a few recipes that we talked about that have nutritional yeast.


Salisbury Steak:

1/4 Cup Cooked Lentils, Drained (little more than 1/8 cup dry)
1/2 Cup Old Fashioned Oats
1 1/4 Cups Cooked Brown Rice (3/4 cup dry)
2 Tablespoons Wheat Germ
2 Tablespoons Wheat Gluten
1/2 Tablespoon Ground Flaxseed
1 1/2 Teaspoons Chili Powder
1/4 Teaspoon Poultry Seasoning
1/4 Teaspoon Black Pepper
1/4 Teaspoon Salt
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 1/2 Tablespoon Low Sodium Soy Sauce


Ingredients For Gravy

1 Medium White Onion, Chopped
1 Tablespoon Ketchup
1/2 Tablespoon Low Sodium Soy Sauce
2 Tablespoons Whole Wheat Flour
1 1/4 Cups Water
1/2 Teaspoon Onion Powder
Pepper and Salt to taste

Prepare skillet first. We don't want to turn it on yet, we just want to have it ready to lay the steak patties into the skillet. So coat skillet with thin layer of water.

Next in a food processor coarsely chop lentils, oats and rice, about 7 pulses. We just want to break them up, not puree them, so careful careful. Plop that into a mixing bowl and add the wheat germ, wheat gluten, flaxseed, chili powder, poultry seasoning, pepper, salt, garlic and onion powder and soy sauce. Kneed together ingredients with your hands untl well combined. Split mixture into 5 equal parts. May need to add water - one Tbsp at a time - so the mixture sticks together. Heat skillet between medium to low. Now that the skillet is hot shape portioned mixture into oval patties and place into skillet and cook 10 minutes, 5 minutes on each side, covered. Adding a teaspoon of water here and there to the skillet if it looks like it's going to burn.

Remove patties from the pan and set aside. Add onion to skillet and cook on medium, stirring constantly until caramelized. Push onion to the side of the pan.

In a jar with a tight fitting lid put ketchup,soy sauce, flour, water, onion powder and salt and pepper to taste. Put lid on jar and shake until all lumps are gone. Pour into skillet stirring together with onions and bring to a boil until thickened. Add steak patties back to the pan and coat patties with gravy. Serve.

Carrot/White Bean Salad

3 TBS fresh lemon juice
1/4 tsp fine grain salt
1/2 cup thinly sliced shallots (optional)

2 cups sliced carrots cut into thin coins
1 cups cooked white beans (or 1 can rinsed)
1/4 cup chopped fresh dill
2 TBSP brown sugar

Put lemon juice, salt, and shallots in a small bowl and set aside.

In skillet over medium high heat, toss carrots with splash of water and let them cook in a single layer. Keep cooking (adding small amounts of water as needed to prevent burning), tossing gently every few 2 to 3 minutes until carrots are soft and browned (approx 12 minutes total).

Add beans and dill to skillet and cook for another five minutes or until the beans are well heated. Add more water if needed to prevent burning.

Place contents of skillet into large mixing bowl, sprinkle with brown sugar and pour lemon mixture over the top. Toss gently. Let sit for ten minutes and toss gently once again. Adjust tast with more salt, sugar, or lemon juice as needed to balance flavors.

Serve warm or at room temperature.

Homemade VEG chicken broth:

1/2 cup nutritional yeast
1 tsp onion powder
1/4 tsp garlic powder
1 tsp celery seed
2 1/2 tsp Italian seasoning

Note: The Cheesy sauce is a what I call a transitional food to get weaned from cheese. It is more heart healthy than cheese and has 1/4 less fat and no cholesterol, but with the nuts it exceeds the amount of fat/oil for those with heart disease.

Compared to cheddar cheese:

Cheesy Sauce 2g fat, 0 cholesterol
Cheddar Cheese 9g fat, 30mg cholesterol



Cheesy Sauce

1/4 cup raw almonds or raw cashews (cashews are softer, so may work better in some blenders.) plain, no salt, cashew butter also works well.
2 cups water
1 tsp. salt (or less to your taste)
1/4 cup nutritional yeast
1 tsp onion powder
1/2 tsp garlic powder
3 Tbsp cornstarch or arrowroot powder
1 Tbsp. lemon juice to taste. (More makes it a sharper cheese flavor, less a milder flavor)
1/3 cup roasted or fresh red bell pepper (optional for color)
Option: blend 1 tsp canned jalapeños for a great nacho-style cheese.

1. Blend all ingredients until smooth.
2. Pour into a saucepan and bring to a boil while stirring constantly.
3. It will thicken to nacho cheese consistency. Serve hot.

Nutritional Info for ¼ cup sauce
45 calories
2 grams fat
0 mg. cholesterol

Great over macaroni for mac & cheese

•This is great as a dip for chips, over taco salad, on tacos or burritos, over vegetables, and over baked potatoes.
•Try sautéing veggies, pouring cheesy sauce over the veggies, then serving the cheesy veggies over baked potatoes.
•Add to broccoli soup for broccoli-cheddar soup.

Hi Don,

We are home tonight.......nearly 6,000 miles since we left MN on February 28th.
Just got in at 8:15 pm and have already been to the grocery store to stock up on veggies and fruit, etc.

From coast to coast, at each of our stops along our trip we've told the story of our meeting you and the wonderful heart healthy lunch your prepared for us. I especially was impressed with your beautifully set table (I belong to the Int'l Table Setters organization!) We want to thank you and "Mrs. TX Don" for the wonderful hospitality you showed us (we were a little worried when there were cows on the road into your house!) We also enjoyed the guided tour of your property. Your new bridge was especially creative and we loved the story of how it came to be.

Thanks to you both for the recipes you've provided for us. You can bet we will be making them very soon. Along the route I received a birthday gift of the book THE HAPPY HERBIVORE and we were prepared many heart healthy meals by our hosts. Everyone was interested in our weight loss and what we were doing......you've planted seeds for more than just Tom and I. Tomorrow is the post vacation weigh in so that will tell volumes. I was on the last hole in my belt buckle today so am hopeful that the indulgences we had were minor violations and we won't have a major set-back.

Thanks again for your hospitality.........it was wonderful meeting up with you and learning your story first-hand. Next time you must come to MN with Mrs. TX Don and we'll reciprocate!

Wow, I bet you are glad to be home. I learned something from you also. I was concerned that my LDL cholesterol level had gone up a few points along with my triglyceride level. Your mentioning of candy bars and our discussion on different milks got me really looking at my sugar intake. I thought I was doing OK because none of my sugar/products had fat in them. I did not think I was eating any more sweets but when I went shopping I looked into the basket and realized - oops. The culprits - Maple syrup, sweet rice wafers, sugar in some whole wheat cereals, 1/2 sugar strawberry preserves, vanilla soy milk, and most condiments, etc... Time to tweak again and I'm really watching now. (I'm going to miss the cinnamon rolls.) I have another Cholesterol test in a month.

A quote from Dr. Esselstyn - "The body compensates to the sugar high with a surge of insulin from the pancreas - and the insulin, in turn stimulates the liver to manufacture more cholesterol. It may also elevate triglyceride levels."
