We use a sharpening steel in the kitchen, or I should say I do and try to browbeat the wife into following my example.

I have a Henckels kitchen knife I bought in the early 90's, it gets a few strokes EVERY TIME before I use it, and you can still shave with that knife.

The problem with a steel is, in my opinion they are very good at touching up a slightly dull knife, or maintaining a good edge. Once the knife is dull they don't have enough bite to put the edge back, and the work begins then.

In short, a steel is good if used often, in my experience.

I used to use an Arkansas stone to sharpen with, now I just use a plain ol' carborundum stone to get the edge refreshed, then polish it with a leather strop or steel to finish. Usually I can get a knife shaving sharp, a lot depends on the steel quality. Stainless is often the worst to sharpen because of it's toughness, good carbon steel is much easier.

call me old fashion, but i favor the Old Timers & Uncle Henry Poket Knives for everday use. Don't get me wrong i have several multi-blade/multitool knives that i keep in the truck & tractor. but i just like the classics

I wonder sometimes just how often somebody uses the can openers or bottle openers on their "Boy Scout" type knives. Mine has both but they have never been unfolded. Maybe I am a minority but to me a knife is basically used as a knife and nothing more.

I can honestly say I have used all of them more than once. Even took apart and cleaned out a Holley 600 on the side of the road with nothing but the Leatherman. I use the knife blades, pliers and wire cutters most. The blade with the gut hook makes skinning easy.

I use Kershaw speed bump knifes for the last 15 years I suppose. My Snap-On truck sells Kershaw and CRKT knifes so its handy for me to buy when I need one. I also sharpen my knifes with a HF diamond block sharpener best $13 ever.

I also like the the classic Old Timer's and Uncle Henry's that were made by Schrade in the USA. Unfortunately, Schrade went out of business in 2004. The new Old Timer's and Uncle Henry's are now made in China and IMHO are not of the same quality.

I like my Chicago folding clip-point for hunting. It's about 30 years old, and not replacable.

I like my my Case "Sodbuster" when I work on my tree farm. You can still get these on eBay.

I shapen mine a few times a year with Lansky System and touch them up with ceramic sticks.

I have several old Uncle Henrys and Old Timers as well as a couple of Case. I am hesitant to carry them since they are 20+ years old. I carry a Gerber for everyday use.

I have my grandfather old Craftsmen whetstone, it must be 40 years old and just has a little ware on it 2"x 6" with a course and fine side. It is excellent to sharpen with. Don't konw if stones are made different now but the old one is great.

I have many folders,fixed blades, and two Gerber multipliers(1 plier,1 needle-nose)(Sog's,Gerbers,Bucks,Shrade,Case,Kabars etc).
I've been fiddlelin with knives since probably 10 years old. I remember Mom snoopin through my room at age about 14 and my switchblade dissapearing. :laughing:
Most of time carry 2 at a time.
