We use a sharpening steel in the kitchen, or I should say I do and try to browbeat the wife into following my example.
I have a Henckels kitchen knife I bought in the early 90's, it gets a few strokes EVERY TIME before I use it, and you can still shave with that knife.
The problem with a steel is, in my opinion they are very good at touching up a slightly dull knife, or maintaining a good edge. Once the knife is dull they don't have enough bite to put the edge back, and the work begins then.
In short, a steel is good if used often, in my experience.
