Don't eat a lot of bacon any more; in fact don't eat breakfast much any more. When I do eat bacon, here's the recipe for how I like it best (I do have a bacon press, but in this case it would be useless):

I cook them in my Big Green Egg, and the only spice I use is a dry BBQ rubb, like Cains or Bad Byron's Butt Rubb...no BBQ sauce. They are always a big hit with guests.

Be careful cleaning the Jalapenos, though...plastic gloves aren't just for sissies. Remove all the seeds and veins and they will be fairly mild...don't and they won't. If you are brave enough to clean the peppers without gloves, be sure and wash your hands THOROUGHLY before touching any mucous membranes or you will instantly regret it. Ask me how I know.

I cook my bacon in the oven. Easier to get it all cooked evenly.

As I was reading this thread my wife came in with a suggestion of bacon for breakfast this morning, since this thread had me craving bacon that decides it!
I make my own bacon, hand slice it and freeze it in one meal portions. We have some about once a month due to health concerns. Making your own is easy to do and it beats the heck out of store bought for taste every day of the week. Some of the best I've made was cured with linden tree honey and smoked with 50/50 cherry/apple wood shavings. I use a 40 year old little chief smoker that I inherited from my father-in-law.

Now, I am really craving bacon! I think what I've missed the most since my bacon hiatus began is not having bacon grease to cook with. Nothing better than bacon grease in cornbread.

The gov't was wrong about butter so I think I will return to the living with bacon. To old to be deprived any longer.

The best way to cook bacon is to deep fry it in bacon grease. You only need an inch or so of bacon grease in the pan to deep fry it, and the bacon grease just keeps multiplying. Keep a tub in the fridge, so you can just spoon some out and heat it. Then when the pan cools a bit, pour the grease through a strainer and put it back in the fridge. Meanwhile, your bacon is uniformly cooked. Who cares if it's flat? About 350 is a good temp.

2Lane, we make almost the same thing as "turds", but omit the smokey sausage (just jalapeno, cream cheese, bacon wrap). We call them "rats".

I cook four slices of bacon in a microwave in 3 minutes and forty seconds. I place a paper towel on a paper plate, lay the bacon on the paper towel and then place a paper towel on top. Place the bacon in the microwave set the time, push button and listen to the noise it is making. You will learn from the sound the bacon makes when being cooked how to cook prefect crisp tasty bacon every time.
