Best ham I have ever had comes from a small family owned meat market here in Yelm, they cure and smoke their own ham, bacon, pepperoni and jerky. They will wrap the ham in baking paper with instructions on cooking it in the paper.
The name of the shop is Stewarts, the main store is in Yelm, it's old and funky with sawdust on the floor, usually customers are lined up about four deep at the counter (take a number ticket please to be wasted on) and they have a space in the Olympia farmers market as well.
Small shops are definitely the way to go. In Northern Oregon, the place to go is Vogets in Hubbard. In Southern Oregon there are several choices. Within 20 miles of me is Nickabob's Custom Meats in Roseburg and B&D Meats in Winston. B&D does a great pepper cured ham, and I have never bought a bad anything at Nickabob's. They all do a real smokehouse smoke, so the hams are a bit dryer than the needled chemical smoke hams you get in supermarkets. They do not dribble when you unwrap them. The thing to remember about small shops is that you have to order your ham ahead of time. By this week they may be sold out.
