Best ham I have ever had comes from a small family owned meat market here in Yelm, they cure and smoke their own ham, bacon, pepperoni and jerky. They will wrap the ham in baking paper with instructions on cooking it in the paper.
The name of the shop is Stewarts, the main store is in Yelm, it's old and funky with sawdust on the floor, usually customers are lined up about four deep at the counter (take a number ticket please to be wasted on) and they have a space in the Olympia farmers market as well.

That's why it is no longer possible to get properly cooked salmon (or CHICKEN!) out anywhere.

Grocery stores started frying and rotisserieing chickens so they didn't have to throw them away after they were too old to sell as fresh...before that they often washed chicken in a mild bleach solution and repackaged them for a few more days...That's why I've told my wife to stop buying roasted chickens from Sams Club, Costco or Publix: way overcooked. Barely edible the day they're brought home, only usable as dog food the next day.

Scientists are field testing poison baits made from a preservative that's used to cure bacon and sausage as a way to control the hogs. Tests will start early in 2018 in West Texas and continue in central Alabama around midsummer.
