Around here, pinto beans are called beans, Great Northern Beans are called soup beans, both are usually served with cornbread, but don't ever mix up the definitions or your supper guests may get perturbed.

What's everybody do with their pintos? I grew some in '16 and I still have most of them. Nobody in the family seems to care for them. I can't keep Great Northerns. We ran out months ago. I'd welcome any suggestions or recipes so I can use them up!

You just plunked my magic twanger. I had so many pinto beans in the high school cafeteria, that I wouldn't eat them for years afterwards...besides creating enough gas to float the Titanic, they hurt my stomach. Enter Anasazi beans. While on a trip to the Four Corners area museum, we noticed they had some Anasazi beans on display, with the notation they were recovered from a food pit that was several hundred years old. To make a long story short, they were able to get some of them to grow, and now they are raised commercially.
They are wonderful! No gas (well, maybe a little some times), no stomach cramps and they have a really great flavor, not like common pintos at all. They cook up in about half the time, and have just a hint of a sweet taste. They were difficult to get for awhile, but we now have a grocery store where we can buy them; don't have to order them on line or go to a specialty store. I recommend them highly. My brother brought me a 10# bag from the milling company; they were that year's crop and they were excellent! Who wants pinto beans for Christmas? Me!

My grandfather grew beans on his farm outside of San Diego. Me and a lot of cousins were born there. The whole family followed his recipe. I make it often. Easy. Just throw everything in the pot and cook for about 3 hours.
For one or two pounds of either pinto or kidney beans.
One or two large smoked ham hocks. Sometimes made with a pound of ground beef along with or instead of the ham hocks.
Two or three mild anaheim or poblano peppers. One or two hotter peppers (arbol, jalapeno). No need to de-seed or anything else. One yellow onion. Three or four garlic cloves.
Black pepper
Chili powder
Salt

One or two large smoked ham hocks. Sometimes made with a pound of ground beef along with or instead of the ham hocks.

Sounds good, Pat. Personally, I eat'em at times, but have just never been very fond of kidney beans. But all the rest of that I could eat anytime.

Beans cause gas because they contain complex sugars that your digestive tract can't handle. The little bacteria get to eat the sugars with no competition, so the multiply happily and release lots of methane and CO2. The way to avoid this is a long soak, giving the beans the chance to sprout a little. You can tell they have soaked long enough when the shells start to split a little. Then wash the dickens out of them to dissolve the sugars and rinse them down the drain.
If you are looking for something to do with pinto beans, make chili. Shop in the Mexican food section of your supermarket to get real Mexican spices. The world is full of chili recipes. Most baked bean recipes use kidney beans, but you can make baked beans with pintos too, and they don't take so long to cook.
Sunday dinner today is Navy beans and smoked ham shank. The beans went on to soak Friday, then the ham and onions went into the crockpot yesterday afternoon. The only seasoning besides the onions was about a tablespoon of Better Than Bouillon Ham Base, which had enough salt to do a large pot of beans. I have corn meal with a little tooth to it that I use for corn bread. I think I'll cut the recipe in half and make one pan straight and one with jalapeños.
