I belief the rise in textured coatings is due for the desire of the sheet rockers for speed.

Exactly. It can hide a multitude of sins. That does not mean texturing is bad, I had one house where I liked the heavy textured look. Many architectural styles can make good use of it, but my general preference is for smooth.

In not all cases did texturing and popcorn hide bad work. My current 1988 build house had non asbestos popcorn ceilings when I bought it. We took off the popcorn figuring the ceilings would need a lot of work. To our surprise they did not, the original crew did a good job.

Thankfully I had the same outcome. What a mess that was though.

Popcorn on the ceiling breaks up light, along with flat paint. Reflections from light show imperfections. Ceiling joists on a lot of houses tend to sag differently, especially if the roof system is built with rafters and not trusses. When you build a house, even if every joist was perfect when installed, there will be some that sag over time. An eighth of an inch probably wont be noticed with popcorn and flat paint. The other issue is that joists are usually on 24 inch centers, and half inch sheetrock can only be used on 16 inch centers, but not a lot of builders will spend the extra money for 5/8 inch thick sheetrock for the ceiling to handle the wider span. Popcorn hides a small degree of sag from sheetrock that is too thin for the span.

Before there was sheetrock most interior surfaces were either wall papered, paneled or lathed and plastered...
These days spray textures and stipple brush patterns are desired to make cheaper sheetrock look like plaster... they also are great at covering imperfections...sheetrock/drywall is not a perfect art...

Back in the day when plaster was the norm...it was often said that textures were like handwriting i.e., unique to the individual...so unless it was a sand or smooth finish one plasterer would be responsible for the finish coat of individual rooms etc.so the texture was uniform...These days veneer plaster is a higher cost alternative to sheetrock and is more of a refined art...

It seems like sheetrock was originally used as a backing for plaster, previously wood strips were used. The sheets had round holes about an inch or more all over to help hold the plaster.

I saw it on an old remodel in New Orleans. Has anyone else seen this?

I learned years ago to not try to choose colors. There are some things not worth giving input on and things where I have my limitations. Rugs, paint, furniture (except my chair), etc....

My new shop is charcoal, light stone, and alamo white. None of which I picked. :)
