Chop leftover turkey breast and mix with chopped walnuts and chopped stilton or other good blue vein cheese that is not creamy, bind together with mayonnaise and spoon into half an avocado, a good pile and it is magnificent, great in the summer (which it is and hot at the moment).
We had a big turkey this year, looked more like an emu and I think we will be still using it for a few weeks yet.
