Yeah... believe it or not, most eateries in the South don't know how to make proper grits. My wife is from Pennsylvania, and she loves the way I make my grits...
That's laughable...most yankees (anyone from the north) don't even know what grits are...they are truly an original southern dish...

I've tried grits probably a dozen times across the southeast and south. Marginally edible. Maybe there is a good recipe out there I need to try. but I think it is just something you have to be born to.

Once they are cooked there is definitely a window of time that they are the best...

They can even start out a little on the runny side...many people like them with cheese...I prefer plain...

One caveat though...if left to dry out in a cooking or serving pan or dish...they can resemble concrete that was left in a wheelbarrow and forgotten about...

Hmmm... :confused3: Every time I visit Charleston and New Orleans I find a place for Shrimp & Grits. Fleet's Landing in Charleston and Mr. B's in NO are two of my favorites.

One of our daughters was in NO for three years and I ate tons of food and liked all of it. But never got to shrimp and grits at Mr B's. It's on my permanent DOIT list now if I ever get back there! In fact we almost chose NO for our Thanksgiving family get together. Maybe next year.

A place I would love to visit, used to travel to Denver and Boston 3 times a year for work but never saw anything else.
