That's laughable...most yankees (anyone from the north) don't even know what grits are...they are truly an original southern dish...Yeah... believe it or not, most eateries in the South don't know how to make proper grits. My wife is from Pennsylvania, and she loves the way I make my grits...

Once they are cooked there is definitely a window of time that they are the best...I've tried grits probably a dozen times across the southeast and south. Marginally edible. Maybe there is a good recipe out there I need to try. but I think it is just something you have to be born to.
Hmmm... :confused3: Every time I visit Charleston and New Orleans I find a place for Shrimp & Grits.
