Small batch of festive apple/clove/peppercorn kraut went into jars this morning. This batch had a little Kahm on it, but not much. It tasted real good coming out of the crock so I think I got the peppercorn and clove ratio about just right. I used 2 green cabbage and 2 red cabbage so the kraut is not as red as my normal batches. The only crock still fermenting is Kimchi Kraut.

Giving apple cider (frozen in gallon jugs) for Christmas presents this year. I have a bunch from the apple trees in the deep freeze.

Giving apple cider (frozen in gallon jugs) for Christmas presents this year. I have a bunch from the apple trees in the deep freeze.

Growing up partially frozen apple cider on a hot day was to die for. We used to freeze gallon jugs, but half gallon and quart jugs as well. The quart and half gallons went out with us in the field at harvest. Sadly I no longer can tolerate the sugar load. Sure wish I could, making it was one fun hobby. The cows lined up at the fence for the wheelbarrows full of pulp. Apple trees sprouted the next year where the cows ate the pulp. Fun stuff.

Candidly, I cannot either (tolerate the sugar load) which is why I don't let the apples get too ripe. A tinge of red and in the grinder they go. I like it tart.

Took the Kimchi Kraut out of the crock today, the last batch of Kraut for the year. It sure is nice to have all the counter space back. I tasted a bit, it has some good heat to it. As is custom one of the dogs had to sample some. She was a little careful with it, but ate it. :thumbsup:

This time of the year, nothing quite beats a trip into the root cellar for canned kraut or potatoes or onions or carrots or spag sauce for that matter. Every trip down is a journey back to last summer.

It sure is. I am about 1/3 to 1/2 of the way through my Kraut. I eat some almost every day. :licking:
