We'd sometimes have steamed dandelion or milkweed greens. Both were best early in the season before they blossomed.sauteed lambs quarters (a wild green)
pressure cooked new potatoes and green beans from the garden
watermelon rind pickles (sweet)
Sliced bread with butter beans poured over top. still one of my favorites.Some items that I love that you don't see a lot of anymore:

Grandma's pickled beets.
Salt Herring.
