That intrigues me. I've never seen anything like that before. Please tell us more. Does it take forever to heat up? Any chance it will crack or even explode?
Any ideas what to do with granite cut-out?

It is on my brother's pit. All I can say it grills very well. It provides even heat so it is good especially for fish and shrimps. Since it doesn't get extremely hot for cooking it doesn't crack. It turns and moves vertically on the post. If it gets too greasy or has something burned to it he just scrapes it off by a metal spatula. No need to wash it. He has it perhaps 10 years already.
It works very similar to Aussie barbie I suppose but it provides even more even heat.
The round wire thing around the fire is a support for grilling forks if you prefer to grill chicken or sausage directly in the fire (sausages or brats taste better that way).

Just to be on the safe side, I'd recommend the first time you heat it to do so slowly and from a safe distance. Once it's been thoroughly heat-soaked at 250F or more for a while any latent water trapped inside should boil off. Then you should only have to worry about thermal shock cracking it rather than exploding. To help prevent cracking, heat evenly and slowly and avoid putting large chunks of cold stuff on it directly (shrimp I wouldn't worry about, but a large chunk of salmon straight from the fridge could be bad).
