It looks like hunting season is back on!!!

Hog hunting season runs year around here, but if they hogs wonder off, the season takes a break until they come back. The have been gone for the duration of the acorns, but now that they have gone sour, the hogs are eating my corn again. They started out coming in around midnight. We keep an eye on the time they are there and can almost predict when they will start showing up in daylight. Right now, it's about 7:30pm to 8:30pm.

Hunt pheasant every so often but numbers around here have dwindled. Most of the rest of my family hunts all types of birds. The fun pheasant hunting is one state up in South Dakota. They are so lousy up there, I have seen 6 of them commit suicide on the truck's topper right in front of me the last time I was there.

Eddie- I wish we had hogs up here to hunt. I am guessing my desire to try it once would not be satisfied by just opening fire at the nearest commercial hog confinement. Maybe I will just settle for the greased pig contest at next years fair...

You know I talked about the wild pigs down by the river before. Well, last weekend we hiked down there and noticed all kinds of hog rooting. The rooting is now up to my property. My neighbor has them all over. He said he even saw them from his window the other day.

Anyway, Wes has a fort (like a stand) near the area they root, so we will try our luck next week when Larry is up. Hog season runs year round here too. They are mostly nocturnal here but do come around at dawn and dusk to and from the river.

Howdy guys.. a bit late to this thread. I’ll just bring up the caboose. I hunt and 70% of our meat consumption is deer meat. I harvested 1 buck and 4 does in 2007 and Jan 2008 season. In the urban rural area that I am one can get up to 5 deer with an added early and one late season. I hunt for meat only and get one buck.

Actually, I am not surprised there are so many deer hunters here(I like to hunt deer, antelope, pig). I am surprised though, that no other bird hunters have chimed in.

Today was an extremely slow day at the refuge. I got skunked, as did my other very experienced duck hunting buddy.

However... My son got his first bird today; got as nice Gadwall. The only bird between the three of us, and the first time hunter got it :D

Isn't it always like that though?
Especially when Dad and best buddy are making sure of it. These days I get more pleasure passing on shots so my son can take them. It's great your son got that first bird. That will be an experience he'll never forget. What a great Dad you are, Robert!

Very good to hear you are a meat hunter too. Those pictures you posted are great and one thing for sure, your wild game meals look prepared 100x better than mine. I never thought about the Shish-K-Billy Bobs before. That looks delicious.

I grind all shanks, shoulders and miscellaneous. Hams are used for all sort of kabobs and casseroles. All are good for every day meals and for special occasion I'll prepare back strap and whole 1 to 2 lbs of T-loin from one deer. They don't all look good but nutritious for sure. Around Kansas City Deer is thick and #1 predator probably is vehicles. I get one buck a year and the rest does... even with the bucks I'm not after glory and big rack... have not found a way yet to make tender Shish-K-Billy Bobs with the antlers yet:D

On many occasions I've been able to get a doe and yearling at the same time. They have absolutely no clue where I'm in the hunting shack even if after a first shot.

Here's the best elk and deer steak recipe I've ever found. It's the only way my kids want me to fix it anymore. Leftovers, if there are any, are great on the cold biscuits also. Enjoy-

Pappy痴 Chicken Fried Steak


Use 2 lbs. of good grade inside round steak (or better), about ス inch thick. Trim off gristle and fat. Cut into pieces about 5-6 inches in diameter. Pound thoroughly on both sides with a butcher knife until almost falling apart. Flour each piece thoroughly and shake off the excess. Dip in batter (below), shake off excess and dip in flour again. Use a deep fryer or a good cast iron dutch oven/skillet with a good brand of vegetable oil. Heat oil to about 325 , turn once, and cook until golden brown.

Batter:

3 Tbls. sugar
ス tsp. salt
1 whole egg
1 Tbls. baking powder
2 cups milk

Mix the first 4 ingredients with ス of the milk and stir until smooth. Add the remainder of the milk and mix well.

Gravy:

1 stick butter
6 cups milk
1 cup cooking oil
1/2 cup flour
2 tsp. salt
pepper to taste

Melt butter completely. Add milk and mix thoroughly. Bring to a boil. Shake flour and oil in a jar and pour into heated milk. Stir until smooth and thickened. Remove from heat, add salt and pepper.

Biscuits :

2 cups flour
1 tsp salt
3 tsp baking powder
5 Tbls. butter
2 cups milk
1 egg
Sift all dry ingredients into a bowl. Cut in butter with a knife. Add milk and mix. Knead dough, and cut into biscuits. Dip into melted butter on both sides and place on baking sheet or cast iron skillet. Bake at 425 for 12-15 minutes. High altitude will require a little more flour.

Had some good luck in WV over Thanksgiving and again over the Christmas holiday.

No trophies but I'm a good cook and make the best jerky.
