IMNSHO,
I think the biggest problem the industry will face is the fact that Americans consider horses more of a "companion animal" than cows or pigs etc.
I'm surprised we are not seeing more goat meat in markets. It is much more uniform in taste, texture and tenderness than horse meat that tends to varies widely.

Back in 70's we were dirt poor. ate just about any & everything that was cheap & if we didnt eat it mom let us go without. We hunted & fished year around probably part of reason I tend to like store bought more now lol... We gardened as well growing a lot of our food in town back yards where we rented. We had goat meat and horse as well as a lot of small game. I loved catching fresh cat fish & pan fish for dinner so that is one thing i do miss a lot... I dont remember the meat being bad only more of a texture was different than other meat. also not as much flavor (less fat probably why) would maybe eat it again depending on price & availability...

Ate some last week. Horse meat sausage is more common than beef sausage in central asia. I eat it when I am there but I've never really liked it much. It has a distinctive strong flavor but I cannot describe it well. Definitely not beefy. Beef is mild and almost sweet in comparison.

They had a slaughter house in Kaufman, Texas that was closed down after this law passed. I wonder if it will open back up.

I had Horse meat off the menu at a restaurant in Malta about 6 years ago. Tasted 'different' not unpleasant but I wouldn't leave home for it.

I'm with Larry Calwell on the nod to Wildlife Safari. Took a horse there that the Vets could not help. All my friends that have animals have used Wildlife Safari.
Have had horse meat back in he sixty's near Hubbard, OR. It was ok.

Back in the mid-90's I was in Kofu Japan for a 10-12 day biz trip fixing a MAJOR issue and my hosts took me to the most expensive restaurant in the prefecture and we ate Ba-sashi which was raw horse meat (like sashimi which is raw fish w/o rice), we ate cooked horse steaks, and horse soup. it was an outrageously expensive meal and considered a regional (up in the mountains of Japan) delicacy.

It was pretty tasty at the time, and given the price (over $3,000 for 6 people) I am sure it was the HIGHEST quality.

But I am now totally in the horses are family category, and I would not eat it again. Back then I had never been friends with a horse, and meat was meat, and I wanted to be respectful to my hosts.

I took them the next night to a Kobe Beef place for "shabu-shabu" and it cost me just under $900 for 7 of us.

I recall that was my MOST expensive business trip EVER...

So I don't want to hijack the thread, but whatdo the rest of us who DON'T live near Wildlife Safari do when our Horse dies? That is a little too big to bury in the backyard!

I have not eaten horse meat. I have sold thousands of them to kill buyers over the years at the many horse sales I have owned or been hired to sell at.

I can say this about the market ... when slaughter was legal the market was strong ..not only for processing but it did set the base for selling riding horse's or potential riding horse's.

For us that do not have a "Safari" a backhoe works ... if its legal in your state!! I've been told in some parts of the country you can not bury one on your property ... I don't know about that though.

You can bet your last dollar when and if a plant opens ... there will be many on site protesting the slaughter of horse's. I could write a long reply about horse slaughter ... I'll just end it with this comment.

Last night I went to put the herd in, getting them off the pastures for the evening.

I told them about the law being changed, and that they could be back on the menu.

I did not have any issues rounding them up. The behaviour change is remarkable.

Horse meat is considered a delicacy in France. I have not tried it. Ken Sweet

Yep, one of our good friends came from France and she and her husband (U.S. Army, retired) said horse meat steaks were very good. But as far as I know, I've never eaten any.
