Pioneer 500 - yes, Mule Pro FXT nope. Really depends on the SxS width more than anything.

I have a side by side and an ATV.
The side by side is more stable simply because its wider. (SxS 60" wide, ATV 50" wide) If they were the same width I doubt there would be any difference in stability.
95% of my riding on our quad was 2 up with my wife on the back, so not sure where the can't carry a passenger on a quad comes from. Many Mfg. make 2 up models.
That said we do prefer our Polaris RZR side by side for trail riding. Selling the quad.

Our farm has steep hills and there is no place where I can't take the Mule Pro FX. Very stable, has never felt in the least bit tippy.

I understand why some prefer ATVs and some prefer UTVs (side-by-sides). They are really
quite different tools, suited for different jobs.

My ATVs are small 500# machines that get into tight areas and turn around easily. UTVs are
the size and weight of a small car. I use my UTV (with hyd dump) only when I need to haul
dirt or other materials.

I also run a 4x4 ATV and a 2WD ATV. I need 4x4 whenever I pull my trailer or chipper. The
2WD drives much better and has much smaller turning radius. I also have a rear differential
on the 2WD, which is only offered currently on the Polaris Sportsman Turf quad. Virtually
all quads have locked rear ends, which makes them terrible on pavement. I have a mix of
paved road, and steep dirt terrain.

Most UTV brands now sold offer a rear lockable differential option, which make them usable for
pavement as well as off road.

My Yamaha Viking is great for big folks. I'm only 6'1 and 250. By far the most room out of all the others I tried.

I also have both, and the S&S get's used a lot more than the 4 wheeler... BUT, if the conditions are bad or the trail narrow, the 4 wheeler will go where the S&S only "wishes" it could go!

IF there's mud, the 4 wheeler will go through places that the S&S will leave you walking.

Depends on the SxS IMO.
A pure utility SxS, that is likely true.
I have a Kawasaki Brute Force 750 ATV, and a pure sport Polaris RZR 900s SxS (both are 4WD). The RZR will easily go anywhere the ATV will as long as it will fit through
