that looks like a "Studor" vent so you don't need to tie into a through the roof vent.The white "pipe" on the left of the picture is one of the indoor "vents", not another drain....

On the Spray Foam, did you go all closed cell of combination of closed cell & 2nd coat of open cell? I have quotes on my place and the Closed cell is better but you sure PAY $$ for it!
The extra water tanks is that rain water for drinking or garden/fire protection?

On the ceiling we went closed cell, in the walls we went closed and 2nd coat of open cell.
The extra tank supplies the bunkhouse right now- it's filtered through a 3 stage system. My "this-year" plans are to tie them into a larger system and add some larger, underground tanks to use for irrigation. We have a well but the water is salty, plans are to mix the rainwater and well water to make it taste ok.
