OK time for an update. We've been living with this for over a year now and have no complaints. The spray foam insulation has been great. The AC/Heat will come on, run a few minutes, then shut off for up to 30 minutes. The rain catch system works great and just 3 weeks ago I installed another 1000 gallon tank- it filled up in one rain! Loving the place...

On the Spray Foam, did you go all closed cell of combination of closed cell & 2nd coat of open cell? I have quotes on my place and the Closed cell is better but you sure PAY $$ for it!

The extra water tanks is that rain water for drinking or garden/fire protection?

On the ceiling we went closed cell, in the walls we went closed and 2nd coat of open cell.
The extra tank supplies the bunkhouse right now- it's filtered through a 3 stage system. My "this-year" plans are to tie them into a larger system and add some larger, underground tanks to use for irrigation. We have a well but the water is salty, plans are to mix the rainwater and well water to make it taste ok.
