Although an impact wrench can do the job, be careful because the tendency to hold the blade with your hand or not at all can get you hurt if a blade makes a quick 1/2 turn and hits you.
All I use is a breaker bar and a 2x4 block. I recommend a 6 point socket because the head might be rounded already from ground or stone contact. The washer covering the blade is usually a wave washer which spring loads the bolt in tension. That means you should not need it to be very tight when you put them back on.
I never remove the deck. Just drive it up on some ramps to give yourself some working room and change them. On all my mowers, I have an extra set of blades so that I can pull them off and put sharp ones back on in one operation. On the smaller (48" deck) machine, I just put a chain on the FEL bucket and bring the deck machine and all up to working height. Standing up while working on the underside of a mower deck has its merits. If this takes you more that 10 minutes, you need to hire a professional. Yeah inspect the deck for paint chips and dog poop collections, but it shouldn't be the most time consuming job at the ranch.
