I have an F350 with a hitch rated for 12,500lbs. Would I gain any increase in tow weight with a goose neck?

Usually. Many folks run 24k trailers pulled by 3500's or dodge 1 ton duallies.

What does Ford say?

Yep, probably 2X or more. Think of a regular PU truck and trailer as just that a PU truck and trailer. Think of a PU truck with a goose neck as a small tractor trailer.

The main advantage of the 5th wheel hitch is the weight distribution. When you have a regular hitch all of the weight is behind the rear axle and with enough weight can start to raise your front end off the ground. With a 5th wheel hitch the weight is located over your rear axle and distributes the weight evenly over the truck which makes for safer handling.

My F250 (SRW) is rated 12500/1250 at the hitch with a weight distributing hitch and 6000/600 with a conventional hitch.

Gooseneck/fifth wheel rating is 13500 lbs (the same ratings go for F350 SRW)

The F350 dually version in 8000/800 conventional 15000/1500 Weight dist. hitch and 15000 gooseneck.
I don't think you will find any pickup rated over 8000 LBS without requiring a weight distributing hitch.
