I assume you saw my recipe. I think it is especially good; that's why I don't mind making it for a crowd...I get all I want...and if there's any left over, someone always volunteers to take it home! Try it...you'll like it!

Eddie, those were my sentiments when my wife and I took the 5th wheel from Sacramento to Corpus Christi for a couple weeks.

My cousins were taken aback that I thought the Mexican food in Texas was bland. They took us to a couple places, and ordered a variety of dishes. All bland...

We had much better Mexican food at the sports bar next to the bowling alley in Los Cruces...

I would love to go to La Posta again, in La Mesilla, NM. That place is awesome!

The two biggest shocks for me when moving to Texas from California, is it's just about impossible to get Carnitas, and when you do, it's very bland. The other is that Tri Tip is even harder to find!!!!

And maybe the third shock was how bland all the Mexican food is here. Very little onions, cilantro or spices. They call it TexMex, which to me, means bland and boring.

I've learned that Mexican food is very different in different places, and what I grew up on isn't anything like what everyone here grew up on. Friends that have moved here from CA have also noticed this. It's kind of funny seeing their FB posts when they go home and eat some "real" Mexican food.

I'm only 30 minutes up H50; you haven't invited me over for Carnitas? :D

We really like carnitas (Mexican pulled pork) in restaurants so I decided to make it at home. I studied about a dozen recipes. They were all different except for the basic idea, which is simmering a large amount of pork at low heat for a long time so it can be pulled apart. So I decided to make up my own recipe, using elements of about a half dozen recipes that looked most interesting. Unlike most carnitas recipes, this one does not require much work. Also does not require frying the pork in lard.

I guess I'm different. I've tried the "pulled pork" in a couple of restaurants and have just been amazed at the popularity. But I'll have mine sliced instead of pulled.

Dinner last night... pork shoulder roast in the crock pot on Sunday for 6 hours in some Sweet Baby Ray's original BBQ sauce. Shredded and put in the fridge until last night.

Put some in a sauce pan with just a touch of the same sauce to warm it up. Put it on a sesame seed bun and add your favorite BBQ sauce. I use a combo of SBR's sweet vidalia onion sauce and their hickory brown sugar sauce. :licking:

Robert if you can do 60 mi back and forth on H50 for a dish of carnitas I will make it and provide the beer too!

Exactly the same for me...except I had mine on toast with gravy.

I ate it. And another one, too. :laughing: And I had chili for lunch and jambalaya for dinner the night before. And jambalaya for lunch today. And tacos for dinner..... and I lost a pound! :laughing:
