How many chickens do you process on a regular basis? I'm just wondering what numbers make this an item to build....aside from the "cool" factor.

Between my dad and I we usually do around 50 chickens, 10 ducks, couple geese in a day. Also will do about 20 turkeys on another day later in the season. Makes the process much easier. Next we need to make a auto temp scalder so we don't have to keep watch on the temp of the water.

How does the mechanism that raises and lowers the chickens work? It looks like there is a cable but as the motor turns how do you convert the rotary motion into linear where it would pull and release the cable?

Just got my auto temp scalder built. Used a 5000w element from a steam table draws about 20a at 240v. Bought the sink on ebay and reinforced the legs. All in around $400 for all the parts bought the controller from mcmaster.
