The thermostat setting should be around 120F according to the stat on my 425. The fan on my 425 after a warm up period runs at any outside temperature. The only draw back I see with bypassing and running continues is the warm up time in very low ambient conditions.
Question: Pros and Cons
1. Running the hydraulic oil as cool as possible.
2. Running at PT temps of sometimes over 180F
3. Running with an in operable fan and over heating the oil.

PS You can check the set point of your thermostat with a thermometer and a pot of water. Heat the water to around 130 and put the metal part of the stat in the water do no submerge the whole stat. If it doesn't make the contacts heat the water slowly until the contacts make. This will be the set point.
