50 ears of too old sweet corn here...... @ 60 cents each = $30!Bought a bushel of fresh picked sweet corn last weekend for $25.00...about 50 plus ears. Husked it all, blanched and froze it that same day. Darn good eating, even if I do say so myself.

We always have; about 4 or 5 minutes in boiling water, right into sink with ice to cool quickly; into freezer on a cookie sheet, take out next day and vacuum pack about 4 ears to a package. Blanching supposedly kills the enzymes that convert the sugar in the corn to starch, which makes it retain its sweetness. It has always worked great for us, and the corn is exceptionally good.Do you have to blanch it before freezing?
I know little about freezing sweet corn - but I’d like to try as sweet corn is - well - sweet!!
