ok i have never eatten crawfish. all i have done with them is catch some nice bass and trout with them and from reading post i'm to late this year but would really like to try them.

we can get them frozen here....fresh must be much better....the Mrs. makes a mean corn and crawfish chowder.

Yeah the frozen ones are awful unless you are cooking them in a casserole soup chowder etc. Fresh boiled or fried is the way to go

I love me some of dem crawdads, corn, and tatters !!! After the dads are done we dump a couple of hams in the boil pot for slicin ' up later . Great ham !!! Louisiana 's havin ' a good season . Prices should be low .

Been to Louisiana in the spring several times. I tried to eat them by the sackful. Our wives got tired if watching me and my buddy eat them. Man I wish I was going this year.

We never had Polish sausage in it, but did the corn on the cob, potatoes, chunks of onion and lemons, Zatarain's Crab Boil, and plenty of salt.

But I've used the Polish sausage in another Cajun dish. One of my favorite recipes is something our Cajun friend called Cajun Shrimp Stew. The first time she made it for us, she used both shrimp and oysters. When I make it now, I don't use oysters because, even though I like them in it, my wife and daughters do not. But you can use the exact same recipe except use chicken and Polish sausage instead of shrimp and/or oysters, and you have a very different, but still delicious stew.

We use to have em all over here,water systems,on ground etc. Haven't seen a one in over 5 years. Guess areas getting overdeveloped. :(

Is there a special way to prepare them? We had some at a restaurant and they were so fishy-muddy tasting we could not eat them and we both love to eat fish. Maybe they were not cleaned properly or cooked right but man they were awful.
