Rather than second discing at ninety degree angle, try cutting across your field at forty-five degrees, relative to initial pass.
This may chop the deepest sods better. Works well for me discing old pasture in Florida.
When you have time for more photos how about describing the gang angle adjustment process on your disc? Photos may do it.
I use wax lube or Fluid Film on the box frame to make changing gang angles on my 587 pound Howse disc easier.
Photo #2 shows smooth result; no troughs. Good adjustment.
