Is it normal for the backhoe to fall when my Gc2610 is not used for a week. Does this indicate a leak?

Are you talking about the boom (which there is a lock) or the stabilizer (outriggers) legs?

With the outriggers, that is pretty common and I wouldn稚 be too concerned. I used to have a MF 2310 and the way the outriggers were set up, near vertical in up position, it was not a problem, but I believe that was an exception and not the rule. With outriggers on another BH, I just run a ratchet strap from one to the other to keep them in place and take the pressure when not in use.

Just about all hydraulics leak a tiny bit and eventually leak down. there is no such thing as a perfect, zero leak seal. Leaking down in a week, in my opinion, is nothing to worry about.
