You will have to reset the relief on your remote valve to about 1450 psi to protect the motor, or a relief valve across the input and output of the hyd motor, set to about 1450 psi..

The flow control here from your link ( https://www.surpluscenter.com/item.asp?item=9-064-50&catname=hydraulic) shows a built-in relief valve to be tweeked to protect the CF (controlled flow for the hyd motor) and dumps to EF (extra flow for other cyl movement)........

everything else downstream will be pressure regulated by the whatever the remote valve can give out.....then plumbed to a common return to tank....

JJ, my understanding is that you will have to change the speed with different ground speeds, rock size and soil conditions. The manufacture told me at full speed it will throw rocks back behind the picker.
