As far as okra, grilled is best there too. However, fried is a close second. If boiling, one needs to add some vinegar to teh water it is boiled in, to kill the slime. Pickled okra has no slime, and is crisp, if done properly

Grilled Okra I want to try but boiled Okra is on the Nope Nope Nope list. They used to put boiled Okra on our plates when I was in school in LA. I never saw anyone eat that stuff, it just went right into the garbage and off to the pigs. Yuck. I am sure that Okra was out of a can too. Yuck Yuck Yuck. :D:D:D

Hey, I am the normal one! It ain't normal to eat yellow and green mushy things! :laughing::laughing::laughing:

Now, BUGS are good to eat, because they are crunchy not mushy. Worms excepted because I think they would be mushy. I say think because I have not tried worms and I do not intend too. :p:D:D:D

I assume you're talking about Talk O' Texas pickled okra, and it really is good, but lately Sam's Club has much bigger jars (64 oz.) of pickled okra for about the same price as a pint (16 oz.) of the Talk O' Texas and I think it's just as good.

Yeah, that is it. Those are good. I was really hoping our pickled okra would be as good as Talk O Texas but they are not. I can eat a whole jar of those things which would be ok but I think they have quite a bit of salt. But they are good.

Dan, they just didn't know how to eat boiled okra. You just put it in your mouth and it'll slide right on down all by itself.:D

Deep fried is the best way to eat yellow squash and okra I think anyway seasoned flour and beer and good amount of black pepper its good stuff. Okra pie is another of my favorite ways to eat it. I am not a boiled okra fan either but you could almost deep fry a boot and make it edible haha.

My wife has perfected our way of frying it up real thin and we use super chilli's (real hot) and jimmy dean sausage and fried onions oh man its excellent we think anyway. :licking:

Ill ask her for ya Bird and get back to you this week but the exact recipe I dont know off hand but what follows is my rendition...

In short she fry's some sausage crumbled up (this is one of our modifications to the recipe that was given to us) then onions then adds the super chilli's (jalapenos will be just fine maybe better for some folks) and okra sliced about a 1/4" thick. once that is cooked she makes a thin (that's the key-thin) seasoned flour and regular flour and a little corn meal batter (the proportions I wont guess I will find out though) and pours that into the frying pan and fry's it until its crispy on the edges and flips it and cooks that side good. It should be a thin pancake type arrangement and we slice it like a pie and I eat it with my fingers. It it is a variance from the thicker traditional southern okra pie recipe we started with fwtw.

Dan, I didn't know there was anyone who didn't like zucchini and yellow squash, and if you don't want them to be a little mushy, just chop them up raw in your salad. Of course, I also like them mixed and steamed, as well as sliced, dipped in egg and flour and fried.:laughing:

Yellow squash I can pass on (I don't like pumpkin pie either). But zucchini??? Bread, sliced and steamed with onions, hollowed out and stuffed with chopped ham, bread crumbs and cheese, etc. etc. etc.)??? This topic is making me hungry.

Love to have that recipe myself. Here's a couple I had in my recipe file; we have fixed the Patties several times; very good.

Fried Okra Patties

1 lb fresh or frozen okra, chopped
1/2 cup chopped onion
1 t. salt
1/4 t. pepper
1 egg
1/2 water
1/2 cup AP flour
1 t. baking powder
1/2 cup cornmeal
1 t. garlic powder
oil for cooking

Combine okra, onion, salt, pepper, egg and water; mix well. In separate bowl, combine flour, cornmeal, baking powder, and garlic powder. Add to okra mix and combine well.

Drop spoonfuls of batter into about 1/2 inch of hot oil ( you could probably deep fry these too). Fry over medium heat until well browned on both sides.

Drain on paper towels. Sprinkle with salt when they come out of the oil for extra seasoning.



OKRA FRITTERS



2 cups of veg. oil
1/2 cup of flour
salt and pepper
2 cups frozen sliced okra thawed and chopped
1/2 small yellow onion diced small (1/2cup)
1 large egg
1/4 cup buttermilk

In large heavy skillet, heat oil over medium . In medium bowl, mix flour, 2/3 tsp salt, 1/4 tsp pepper. Add okra and onion and toss to coat. In small bowl, whisk together egg and buttermilk and add to okra mixture and stir till combined.
In two batches drop batter in 2 tablespoon mounds in oil. W/small spatula gently flatten each mound and fry till golden, about 4 minutes per side, flipping once. Drain on paper towels. Makes about 10.
