Both of those recipes sound good to me, and "Okra Patties" reminds me of when I had an emergency appendectomy when I was 12 years old. I'd been in terrific pain Friday night, Saturday my parents took me to the doctor and he diagnosed constipation and prescribed castor oil. Saturday night and all day Sunday, I was in terrific pain, so Sunday night my parents took me to a hospital emergency room, and a bit after midnight I had an appendectomy, then was in the hospital until Friday. Now this was a Seventh Day Adventist hospital in Ardmore, OK, so they didn't serve meat to the patients. Instead, we got "patties" of some kind, and a lot of people complained about the lousy food. Now I have no idea what those patties were made of, but the flavor, to me, was fried okra, so I had no complaints about the food; thought it was delicious.:laughing:

Hey Bird and 2Lane,

I asked my wife last nite about the okra pie recipe and I had it pretty close the batter isn't what I said though. The batter is only Kentucky kernal (I know that's the wrong spelling its a military officer :) ) seasoned flour with some course black pepper no more salt though the flour has quite a bit and water and make it pretty thin like I said that's the key. Its better we think anyway if you can make it more crispy than fluffy and about a half inch thick is all. She fixes it in a skillet a fairly big one.

As far as the amounts of components well :) we take some of this and some of that so exact measurements are hard to determine so put as much of everything in as you like. She does however cook the sausage first and take it out of the pan and drys it on paper towels and pours 95% of the grease out and caramelizes the onions and browns the okra (that to me is the most important aspect that's where the real flavor is out of okra but that's jmo) in the left over grease and lightly browns the peppers and then adds the batter and cooks it all fairly crispy 1/2" thick pancake like affair getting it good and browned is the best tasting we think anyway.

So she cooks the meat, drains of the fat, cooks up the orka and onions, puts in the meat, mixes it all up, then pours in the batter?

That sounds pretty easy, fast, and not much mess. We will have to try this cause it also sounds REAL good! :licking::licking::licking:

Yes Dan I forgot to say mix it all together d'oh and then add the batter sorry about my cooking and recipe recital manners leave something to be desired! :laughing: Enjoy and yes it is real quick to make all in one pan helps.

At first I thought she was making a calzone type of thing with the onion, okra, sausage mixture. Which actually sounds really good too but more work. Just dumping in the batter in the pan is quick and easy. We will try this.

Dan, Calzone would probably be worth the work, that does sound good.!

This morning, the newer Walmart in Denton had corn for 28 cents an ear, but the old Walmart had it for 15 cents. And today, we vacuum packed and froze them without blanching. It's very good looking corn so we'll see later how it tastes.
