Wife didn’t like goat till she tried it. Then let’s eat another one. Low and slow they BBQ well. Much prefer goat over lamb or venison.
Greek friend taught a trick to cut a little hole under the skin on a leg and use compressed air to inflate the skin off the carcass before skinning. Makes it easier.
Raised goats and allowed DIY butchering on site. I supplied outdoor water hose, hanger and bury remains. Most customers prefer that and made extra income for the farm. Some just wanted choice meat. Most took everything to eat except the skin and hoofs. Demand far exceeded what I could supply.
