the town selectboard meeting is tonight. I'm going tonight since I volunteered to be the Red Cross Shelter Director. Not sure how many volunteers they have...we'll see.

54˚ cloudy heading to 72˚. The asparagus is up, two stalks are ready to pick. I'm about a week late planting potatoes but hopefully today the cut 11 pounds will be in the ground. Stay warm.

The drained and rinsed black beans in that recipe surprised me. I'd have to try it with the black beans just as they came out of the can. Since there's no grease or extra oil, extra juice seems to be a good thing.

My mom use to make chili-corn with pinto beans, ground meat chili, and corn. It was great spread over crumbled cornbread.:licking:

Jim , The drain & rinse may be to flush surplus sodium....Your Mom's chili-corn with pinto beans sounds good too....especially spread on the cornbread...I bet either of these recipes would be really good with some of that real small shoe peg white corn....I love that mixed with anything.

A bit more flex than I anticipated. Went with 1 1/2 x 1 1/2 x 3/16 on advice of the metal supplier. Wish I had gone with 2x2x3/16. It will be fine as I will just rest there, supported at 3 points.

Good to hear people are healing as well.

Never heard of the drain and rinse on the beans until last year, always just used right out of the can. Found that drain and rinsed they were also a good addition to salads.

I really like my wife's salads, she uses beans, dried cherries, raisins, tomatoes, some spinach, leaf lettuce, and a rasberry vinigerette, and recently, some Stilton cheese, from Costco. Stilton is kind of a english version of Bleu cheese, I guess.

Brin, that looks like our chill recipe except for the sugar. At the end we also add cilantro and hot sauce.

I was reading TBN during lunch - Tai Tacos (plant based fat free) The main ingredients are chick peas and cabbage.
To get the taco shells formed formed with no fat we bake them (10 minutes) in a dish with parchment paper (so no sticking) and aluminum foil (to keep shape)- see picture We used to put them on a taco rack but they kept falling off.

Those Tacos look great...The sugar in the other recipe is not needed at all...If you read toward the end ...it even speculates the sugar was listed just to make the corn sweeter...I would not use sugar either.

I was surprised to see the chili recipe was listed as high in sodium with the rinsing of the black beans. One other thing we do is sauté the onions and garlic in water.
