Yeo we are a spoiled lot now but a fall turkey IMO is better tasting than a springer and not as good as frozen farm raised unfortunately. It's the sport to me and the preservation of independence and being able to survive if the conveniences recede.

I have eaten Spring turkeys and my experience was just the opposite. The legs were so gamy they were inedible. The breast was better, but still a bit too gamy for me. I attributed it to the them having to scrounge for food during the Winter; they had virtually no fat on them. I concluded that a Fall turkey would probably be better because of the food supply.

What seems to make sense around here in southern Ks is the fall turkeys are eating a lot of insects. The spring turkeys fed on grain all winter.

It really boils down to what the bird you ate has been feeding on. I have no problem shooting the young jakes. I'd eat that any day over an old tom.
